
Ingredients
1 cup basmati rice
3-4 cardamom pods
1-2 bay leaves
2-3 cloves
3 tbsp butter + extra for greasing
1 cup mixed vegetables (potatoes, carrots, cauliflower, beans, paneer)
2 tbsp yogurt
½ tsp garam masala (Recipe: https://old.desidaawat.com/garam-masala/)
1 tbsp ginger and garlic paste
1 tsp red chili powder
salt, to taste
onions to garnish
4-5 strands of saffron
1 tbsp milk
a handful of cashew nuts
Directions
This is the list of ingredients.


Soak the rice for 30 minutes.

Then cook them till al dente with the cardamom, bay leaves, cloves and a few drops of oil.

This is how it should look like when done.

Heat the butter in a pan, and add the ginger and garlic paste. Then add the bay leaves, cloves, cardamom and cinnamon and sauté for a few minutes.

Add the onions and sauté till brown.

Add the mixed vegetables.

Then the garam masala, salt and chili powder.

This is how it looks once the vegetables are cooked.

Once cooked, add the curd and take it off the flame.

Deep fry the onions and set them aside.


Soak the saffron with 1tbsp of hot milk and set aside.
Grease an oven proof dish with butter.

Layer with half the rice.

Layer with vegetables and fried onions.


Repeat with the rice, vegetables, butter and fried onions.


Pour the saffron milk evenly over the rice and add the cashew nuts.
Bake in an oven for 30 minutes at 150 degrees Celsius.
