
Ingredients
1 medium size pumpkin
2tbsp vegetable oil
1tbsp ginger, grated
1 stick lemongrass
3-4tbsp red curry paste (Recipe: https://old.desidaawat.com/red-curry-paste/ )
2tbsp lime juice
1 red chili, to garnish
1tbsp sugar
1 medium size onion, chopped fine
1cup coconut milk
2cups vegetable stock
salt, to taste
basil leaves, to garnish
a bunch of spring onions, chopped, to garnish
Method
This is a list of ingredients.

With a pestle, bash the lemongrass.


Take a clean cooker.

To that, add the oil.

Next, add the onions.

Saute the onions for a few minutes and add the lemongrass.

Then, add the ginger.

Next, add the red curry paste.

Give it a good mix.

Then, add the pumpkin.


Let it cook for few minutes.

Then, add the salt.

Next, add the vegetable stock.

Mix everything. Put on the lid and give it 2-3 whistles, or till the pumpkin is soft and tender.

This is how it looks when its cooked.

Remove the lemongrass and blend the soup with a hand blender.

After blending, add the coconut milk.


Next, add the lemon juice.

Finally, add the sugar.

Sprinkle with chopped green onions and red chilies on top. Serve hot.
