
Ingredients
175 gms all purpose flour
¼ tsp baking soda
¼ tsp ground cinnamon
¼ tsp ground ginger
65 gms butter (chilled and cut into cubes)
75 gms sugar
2 tbsp golden syrup
1 egg yolk (use the egg white if the mixture is too dry)
Method
This is a list of ingredients.

Into a bowl, sift in the flour.

Then, add the baking soda.

Next, add the ground ginger.

Finally, add the ground cinnamon and sift everything in.

Next, add in the cold butter.

And rub it into the flour with your hands.

Add the sugar.

To the golden syrup, add the eggs and mix it in.

Add this to the flour.

Knead with your hands, till you get a soft dough.

Wrap it up in cling film and chill it in the fridge for at least 3 to 4 hours.

After the dough has been chilled, put it on a board.

With a rolling pin, roll it to about 1cm thickness.

You can use a cookie cutter at this point to cut it into the desired shapes. I made it into balls, which will take the shape of round cookies after they have been baked.

Bake in a pre heated oven at 180 degrees for 20 – 25 minutes, or till the cookies are done. Let them cool down completely on a wire rack.

The cookies will stay in an air tight container for up to 2 to 3 weeks.
