Flattened Rice cooked with Boiled Potatoes and Peas, and served with Peanuts and Sev

Poha, which is made from flattened rice, is one of the most popular breakfast dishes in the Western part of India, mainly Maharashtra. 

The main ingredient is flattened rice, which is then cooked with potatoes, peas and a host of spices to give it its unique flavour. 

This recipe is quite simple to make, and can be made in less than 30 mins, which makes it a perfect breakfast for busy people. 

Ingredients

  • 1 1/2 cup poha (flattened rice)
  • water, to wash
  • 1 tbsp oil
  • 1/2 tsp mustard seeds
  • a handful of curry leaves
  • 1 dry red chili
  • 1 small onion, chopped
  • 1 large potato, boiled and cut into cubes
  • 1 tsp ginger, minced
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1/2 cup green peas
  • salt, to taste
  • 1 tsp chaat masala
  • 1/2 tsp dry mango powder (amchur) 
  • a handful of coriander, chopped
  • 1/2 cup peanuts, roasted and chopped
  • 2 tbsp lemon juice
  • 1/2 cup sev, to garnish

Instructions

  • Put the poha on a sieve, and wash it thoroughly under running water. Take off the excess water and set it aside.
  • To a pan, add the oil. Once it is hot, add the mustard seeds. Once they start popping, add the curry leaves and red chili. Sauté for a minute. 
  • Then, add the onions, and cook them till they turn translucent. This should take about 3-4 mins. 
  • Then, add the potatoes, ginger, coriander powder, red chili powder, turmeric powder and the poha. Mix everything together. 
  • Add the peas, salt, chaat masala and dry mango powder, and mix everything in, and take it off the heat. 
  • To serve, transfer the poha to a serving bowl, and sprinkle with coriander, peanuts, lemon juice and sev.
  • Serve hot.

Step-by-Step Instructions

Put the poha onto a sieve.

Wash the poha under tap water.

Rinse out the excess water and set aside.

To a pan, add the oil.

Then, add the mustard seeds.

Once they start popping, add the curry leaves.

Then, add the red chili.

Saute for a minute and add the onions.

Saute them till they turn translucent, and then add the potatoes.

Add the ginger.

Add the coriander powder.

Next, add the red chili powder.

Add the turmeric.

Mix everything in and add the poha.

Add the green peas.

Then, add the salt.

Add the chaat masala.

Then, add the dry mango powder.

Mix everything in.

Add the coriander.

Mix it in and take it off the heat.

Transfer it onto a serving bowl.

Top it off with lemon juice.

Then, add the peanuts.

Finally, add the sev.

Top it off with red chilies and coriander.

Serve hot.
