
Ingredients
1 tbsp oil
1 onion, chopped fine
1 tbsp ginger
1 tbsp garlic
½ green pepper, chopped fine
½ red pepper, chopped fine
½ yellow pepper, chopped fine
2 tomatoes, chopped fine
½ cup tomato puree
1 tbsp chipotle paste
salt, to taste
1 tsp red chili powder
1 tsp oregano
1 cup rice, cooked
juice of ½ a lemon
¼ cup jalapeños
Method
This is a list of ingredients.



To a pan, add the oil.

Then, add the onions.

Next, add the ginger.

Then, add the garlic.

Saute for a minute and add the peppers.


Cook the pepper till they turn soft.

Then, add the tomatoes.

Mix the tomatoes in and then add the tomato puree.

Cook this for 5-7 minutes on a low flame.

Add the chipotle paste.

Then, add the salt.

Next, add the red chili powder.

Add the oregano.

And mix everything in.

Add the cooked rice.

Mix it in and let it cook for about 5 minutes.

Finally, add the lemon juice, give it a mix and take it off the heat.

Sprinkle with jalapeños on top.

Sprinkle with chopped spring onions and red chilies on top.

Serve fresh.
