Sweet and Spicy Chutney made with mangoes

A traditional Indian chutney with a mix of sweet and spicy flavours, with chunks of mango pieces. Given the sweet & spicy flavour. this is a good accompaniment to all kinds of food whether it’s bread or cold cuts or cheese or chicken.
Ingredients
- 1 kg ripe mangoes
- 250 ml vinegar
- 200-250g sugar (depending on taste)
- 1/2 inch piece of ginger, grated
Dry Spices:
- 3-4 cardamom pods
- 2-3 dried red chilies
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 2 tsp nigella seeds
- 1 (2″) cinnamon stick
- 2-3 cloves
Instructions
- Peel and roughly chop the mangoes.
- In a big pan, add the dried spices and toast them for about 10 mins, stirring frequently.
- Once toasted, add the vinegar and sugar and let it boil till the sugar melts.
- To that, add the chopped mangoes and grated ginger.
- Cook the mangoes till they turn soft and mushy, and then take the chutney off the heat.
- Once the chutney has cooled down, store in sterilised glass jars.

Once refrigerated, the chutney stays well for about 3-4 months.
