Spiced Mango Chutney

Sweet and Spicy Chutney made with mangoes

A traditional Indian chutney with a mix of sweet and spicy flavours, with chunks of mango pieces. Given the sweet & spicy flavour. this is a good accompaniment to all kinds of food whether it’s bread or cold cuts or cheese or chicken.

Ingredients

  • 1 kg ripe mangoes
  • 250 ml vinegar
  • 200-250g sugar (depending on taste)
  • 1/2 inch piece of ginger, grated

Dry Spices:

  • 3-4 cardamom pods
  • 2-3 dried red chilies
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 2 tsp nigella seeds
  • 1 (2″) cinnamon stick
  • 2-3 cloves

Instructions

  1. Peel and roughly chop the mangoes.
  2. In a big pan, add the dried spices and toast them for about 10 mins, stirring frequently.
  3. Once toasted, add the vinegar and sugar and let it boil till the sugar melts.
  4. To that, add the chopped mangoes and grated ginger.
  5. Cook the mangoes till they turn soft and mushy, and then take the chutney off the heat.
  6. Once the chutney has cooled down, store in sterilised glass jars.

Once refrigerated, the chutney stays well for about 3-4 months.
