
Today, we will go to rustic Punjab and make a winter staple – Makki ki roti accompanied by sarson ka saag. Makki ki roti is a Punjabi flatbread, a winter staple made with coarse yellow cornmeal and simple ingredients. Paired with sarson ka saag and a nice big helping of white butter, it makes the ultimate comfort food, especially in the cold weather.
Besides taste, Makki ki roti & sarson ka saag is gluten free, iron-rich and good way to detoxify the body. The reason it’s eaten in winter time is due to the fact the mustard greens help warm the body. All in all – great taste and great health benefits too!
Ingredients
To Make The Dough
- 2 cups Makki Atta
- ½ tsp jeera powder
- ½ tsp coriander powder
- ½ tsp red chili powder
- ½ tsp chaat masala
- salt, to taste
- 2 tbsp kasoori methi
- ½ – ¾ cup warm water, to knead
To Make The Roti
- Makki Atta, to knead the dough
- ghee, to cook
To Serve The Roti
- ghee, to serve
Method
Step1: To Make The Dough
(1) Mix all the ingredients except the warm water in a bowl. Once mixed, add the warm water slowly, and knead into a soft dough. Cover with a dish cloth and let it rest for 1 hour.
Step2: To Make The Roti
(2) Take a little dough in your hands, and knead into a ball. Flatten it with your palms, and roll it to an ½ cm thickness with a rolling pin.
(3) Put a pan on the gas, and add a little ghee when it turns hot. Gently lift the roti and put it on the pan. Cook on both sides till completely done. Transfer onto a plate.
Step3: To Serve The Roti
(4) Serve the makki roti hot and add a little ghee on top.
