Souvlaki Chicken

Souvlaki is a major Greek street food and you cannot go to Greece and not experience Souvlaki. With the terrible pandemic, travelling seems a long way off, so we have tried to create authentic Greek street food recipe that you can enjoy at home.

Like kebabs, the word Souvlaki simply means “meat on skewers.” but it can also be used to describe the whole actual meal including the pita.

For this recipe, we have chosen a Ladolemono dressing which translates simply to lemony olive oil and is such a versatile concoction. It can go from marinade to salad dressing to delicious dipping sauce in the blink of an eye.

Ingredients

For The Skewers:

  • 500 grams boneless chicken

For the marinade

  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • ½ tsp ground cumin
  • ½ tsp cayenne pepper
  • 1 tsp smoked paprika
  • 2-3 small garlic clove, grated
  • ½ tsp salt
  • 8 skewers

For The Ladolemono Dressing:

  • 2 Tbsp lemon juice
  • 4 Tbsp olive oil
  • 1 teaspoon dried oregano
  • 1 garlic clove, finely minced
  • Sea salt and freshly ground black pepper to taste

Method

For The Skewers:

  • Cut the meat into small 2cm x 2cm square pieces about 1 cm thick.
  • Mix the lemon juice and olive oil. Add the oregano , salt and pepper and mix well. Add the chicken using to the above marinate . 
  • Cover and refrigerate for up to 2 hours or overnight for an even stronger flavour.
  • To grill in the oven, pre-heat for 10 mins to the max with top and bottom heat and grill for 12-14 minutes in between turn the chicken so that it’s cooked evenly on all sides.

For The Ladolemono Dressing:

  • In a small mason jar add all the ingredients for the dressing
  • Shake until well combined and pour over the souvlakis, right as they come out of the grill.
  • Garnish with parsley
