Falafel

Ingredients

½ cup chickpeas, diced

¼ cup onion, chopped

1-2 cloves of garlic

1-2 tbsp parsley/coriander leaves

1 tsp ground cumin

¼ tsp turmeric

¼ tsp red chilli powder

¼ tsp black pepper powder

2 tbsp semolina/plain flour

½ tsp baking soda

salt to taste

Oil for frying

Wash and soak the chickpeas overnight.

Take half of the chickpeas and cook them in a pressure cooker until they are well done.

In a blender, add the cooked chickpeas.

Next, add the uncooked chickpeas and garlic.

Add cumin powder and tumeric powder.

Add the salt and red chili powder.

Next, add the lemon juice.

Blend this to a coarse mixture. It should look like the picture below.

Transfer this onto a plate.

To this mixture, add the onions.

Add the coriander.

Next, add the semolina and ground pepper.

Then, add the baking powder.

Taste test, and add more salt if necessary.

Grease your hand with a little oil, take a little mixture on your hands and form small balls.

Deep fry the falafel in hot oil till golden brown.

Drain them onto a kitchen towel.

Serve hot. They can meet eaten by themselves or in a salad or a wrap.
