Sweet Potato Tikki (Navratri)

Ingredients

3 small sweet potatoes, boiled

1tbsp ginger

1tbsp lemon juice

1 green chili, deseeded and chopped fine

a big bunch of coriander, chopped fine

¼cup peanuts, pulsed a few times in the grinder

1tbsp cumin powder

1tbsp coriander powder

pink salt, to taste

oil, to shallow fry

Method

Take a clean bowl.

Peel and grate the boiled sweet potatoes into it.

To that, add the peanuts.

Then, add the coriander.

Next, add the green chilies.

Add the cumin powder.

Then, add the coriander powder.

Next, add the pink salt.

Finally, add the lemon juice.

Mix everything in.

Grease your hands, take a little mixture and ball it into a ball. Then gently, flatten it out with your hand.

Do the same for the remaining mixture and lay them flat on a well greased tray. You can directly fry them now, or let them firm up in the fridge for about an hour.

To a pan, add a little oil and add the sweet potato tikkis.

Shallow fry them on both sides till done. It should take about 2-3 minutes per side.

Transfer them onto a plate.

Serve hot.
