
Ingredients
1½ cup pineapple, cut into bite size chunks
3-4 cups cooked rice
¼cup vegetable stock (optional)
3tbsp vegetable oil
2 onions, finely chopped
3 cloves garlic, finely chopped
1 red chili, sliced thinly
½cup red curry paste (Recipe: https://old.desidaawat.com/red-curry-paste/)
1 ½cup mixed vegetables (peas, carrots, corn, beans)
½cup mushrooms, washed and cut
½cup roasted unsalted cashews
½cup roasted unsalted peanuts
¼cup raisins
3tbsp soy sauce
2tbsp oyster sauce, optional
½tsp sugar, optional
a bunch of spring onions, chopped, to sprinkle on top
Method
This is a list of ingredients.



To a pan, add the oil.

Next, add the onions.

Saute the onions for a few minutes.

Next, add the garlic.

Then, add the ginger.

Add the red curry paste.

Next, add the cashew nuts.

Then, add the raisins.

Saute them for a 2-3 minutes.

Add the soy sauce.

Next, add the vegetables.

Then, add the mushrooms.

Mix everything in.

Add the pineapple chunks.

Cook the vegetables for a couple of minutes.

Then, add the rice.


Mix the rice and the vegetables well.

Finally, add the red chili flakes.

Stir them in and take the rice off the heat.

Sprinkle with chopped spring onions and roasted peanuts on top. Serve hot.
