
Red Curry is another popular dish to come out of Thailand. It mainly consists of the red curry cooked cooked in coconut milk along with a few flavourings like cinnamon, galangal, kaffir lime leaves and lemongrass. a ton of vegetables such as tofu, potatoes, baby corn, beans, mushrooms and carrots can be added to it. You can also add any kind of meat or seafood.
The red colour mainly comes from the dry and fresh red chilies, which are then ground into a paste with ginger, coriander root, black peppercorns and shallots to give it that unique flavour.
Thai Red Curry is normally served with steamed rice, but it can also be had with Pad Thai Noodles or Pineapple Fried Rice, recipes for which are below.
Below is the step by step recipe to make the Thai Red Curry with Vegetables. The best part about this dish – its vegan!
Ingredients
2 tbsp vegetale oil
3 tbsp red curry paste (Recipe: https://old.desidaawat.com/red-curry-paste/)
2 cups coconut milk
water, as needed to make the curry
1 cinnamon stick
2-3 inch pieces of ginger/galangal
5 kaffir lime leaves
1 stick lemongrass, bashed
3 tbsp light soy sauce
1 tbsp brown sugar
¾ cup tofu, cut into cubes
1 ½ cups vegetables (e.g. beans, carrots, baby corn, potatoes, eggplant, mushrooms), cut into large chunks
spring onions, to garnish, chopped fine

To a pan, add the oil.

Next, add the red curry paste.

Cook the red curry paste till the water has almost evaporated from it.

To that, add the coconut milk.


And cook till the paste thickens, as shown in the picture below.

Add water.


And cook again for about 5 – 7 minutes on a medium flame and bring it to a boil.

Next, add the cinnamon stick.

Then, add the ginger/galangal.

Add the kaffir lime leaves.

Next, add the bashed lemongrass.

Add the soy sauce.

Then, add the brown sugar.

Add the potatoes.

Then, add the baby corn.

Next, add the carrots. Cook the potatoes, baby corn carrots till they turn tender.

Finally, add the remaining vegetables.

Cook the vegetables in the curry for about 2 -3 minutes and then take it off the heat.

Sprinkle with coriander and red chilies on top.

Serve hot.
