Pav Bhaji

Ingredients

4 medium potatoes, cut into 8 pieces each

1 small cauliflower, roughly chopped

1 green capsicum, chopped small

6 tomatoes, chopped fine

½ cabbage, chopped fine

1 cup green peas

1 large carrot, chopped fine

2 medium onions, chopped fine

¼ cup tomato puree

a big blob of butter

1 tbsp ginger

1 tbsp garlic

3 tbsp vegetable oil

1 tsp red chili powder

2 tbsp pav bhaji masala

2 tbsp lemon juice

salt, to taste

a handful of coriander, to sprinkle on top, chopped

Method

This is a list of ingredients.

To a cooker, add the potatoes.

Then, add the cauliflower.

Next, add the carrots.

Then, add the cabbage.

Finally, add the water.

You can add some salt at this time, and cook the vegetables till done.

This is how the vegetables look like when done.

With the masher, mash the vegetables.

Set aside.

To a pan, add the oil.

Heat the oil and add the onions.

Saute the onions till golden brown.

Then, add the ginger.

Next, add the garlic.

Add the tomatoes and cook them till the water has evaporated from them.

Add the salt.

Next, add the pav bhaji masala.

Add the red chili powder.

And mix the masalas in.

Add the tomato puree.

Then, add the capsicums.

Cook this for about 5-7 minutes, or till the capsicum is tender.

To the mashed vegetables, add the peas.

Then, add the masala.

Mix everything in and take it off the heat.

Add the butter.

Finally, add the lemon juice and mix it in.

Sprinkle with chopped coriander on top.

Serve with pav.
