Olive and Herb Focaccia

Italian bread flavoured with herbs and olives

Ingredients

To Make The Yeast Mixture

  • 100 gms water, warm
  • 10 gms sugar
  • 2 tsp yeast

To Make The Dough

  • 180 gms all purpose flour
  • 40 ml olive oil (to be used in batches)
  • 5 gms salt

To Make The Bread

  • a handful of olives, chopped in circles
  • ¼ cup mixed dried herbs

Method

Step1: To Make The Yeast Mixture

(1) To a bowl with water, add the sugar and yeast. Give it a good mix, and let it rest for at least half an hour.

Step2: To Make The Dough

(2) To another bowl, add the flour, yeast mixture, 10ml of the olive oil and salt.

(3) Knead it into a dough. This should take about 15-20 minutes. 

Step3: To Make The Bread

(4) Add 10ml oil to a glass bowl, put the dough in and let it rest in a warm place for at least an hour. Once its risen, poke holes into the dough with your fingertips.

(5) Add the olives and herbs on top. Then, add the remaining olive oil.

(6) Bake in a pre heated oven at 180 degrees for 12 – 15 minutes or till done. Serve fresh.

Then, add the yeast.

Add 10ml oil to a cake tin, put the dough in and let it rest in a warm place for at least an hour. Once its risen, poke holes into the dough with your fingertips.

Add the olives and herbs on top.

Then, add the remaining olive oil.

Bake in a pre heated oven at 180 degrees for 12 – 15 minutes or till done.

Serve fresh.

This bread stays in an air tight container at room temperature for up to 3 days, and for up to a week when refrigerated.

      yes. you can use baking soda. Use 1 teaspoon of baking soda for 1 cup of flour. since you aren’t adding yeast, you don’t need to rest the batter. Just mix everything and bake.
