Refried Beans

Ingredients

2 tbsp oil

½ onion, chopped fine

1 tsp ginger

1 tsp garlic

1 tomato, chopped fine

1 tsp red chili powder

salt, to taste

1 cup kidney beans

½ cup leftover kidney beans water

Method

This is a list of ingredients.

To a pan, add the oil.

Heat the oil, and add the onions.

Saute the onions for a couple of minutes, and then add the ginger.

Next, add the garlic.

Sauté and brown the onions for a few minutes.

And then add the tomatoes.

Cook the tomatoes, till the water has evaporated from them.

Then, add the red chili powder.

Next, add the salt.

And mix everything together.

Add the kidney beans.

Finally, add the leftover water.

Cook for a few minutes, and with a masher, mash the kidney beans roughly.

Once they have been mashed, take them off the heat.

Top with grated cheddar cheese, sour cream, coriander and red chilies on top.

Serve fresh.

The refried beans can be served as a dip along with other Mexican dishes, or you can also add them onto tortillas for nachos, or on a flatbread for quesadillas and burritos.
