Couscous Vegetable Salad

Ingredients (for the salad)

½ cup couscous

½ cup water, hot

1 carrot, julienne

1 small cucumber, julienne

2 cups lettuce, torn roughly

1/2 green pepper, sliced thin

1 apple, chopped fine

1 red onion, sliced thin

1/2 cup corn, boiled

2 medium tomatoes, chopped and seeds discarded

1 orange, seeds and skin removed

a small bunch of coriander, chopped fine

1/2 cup mixed nuts, toasted (almonds, walnuts, cashew nuts)

a handful of seeds, toasted (pumpkin, flax, sunflower)

Ingredients (for the dressing)

1/4 cup lemon juice

1/4 cup extra virgin olive oil

2 tbsp dijon mustard

1/2 tsp brown sugar

salt and pepper, to taste

Method

This is a list of ingredients.

To a bowl, add the couscous.

Add hot water to it.

Cover it with a plate and let it rest for about 30 minutes.

This is how it looks like when its cooked.

To a pan, add the almonds.

Then, add the cashew nuts.

Toast them till they turn golden brown.

Transfer them onto a plate and let them cool down completely.

To the same pan, add the pumpkin seeds.

Then, add the flax seeds.

Toast them for a few minutes.

And transfer them onto a plate and let them cool down completely.

To a bowl, add the mustard.

Then, add the olive oil.

Next, add the lemon juice.

Add the sugar.

Add the salt.

And finally, add the black pepper.

Mix everything together.

To a big bowl, add the lettuce.

Then, add the onions.

Next, add the carrots.

Add the capsicum.

Then, add the tomatoes.

Next, add the cucumber.

Add the corn.

Then, add the orange.

Add the apple.

Finally, add the coriander.

Next, add the couscous.

Add the salad dressing,

And mix everything in.

Add the toasted seeds.

Then, add the toasted nuts.

And give the salad a final mix.

Transfer to a bowl.

And serve fresh.
