Coffee flavoured Italian dessert with mascarpone and ladyfingers

Ingredients
To Make The Mascarpone Cream
- 500 gms mascarpone
- 300 ml double cream
- ⅓ cup sugar
To Make The Espresso
- 2 tbsp coffee powder
- ¾ cup water
To Assemble The Tiramisu
- 20 sponge fingers
- cocoa powder, to dust
Method
Step1: To Make The Mascarpone Cream
(1) In a clean bowl, add the mascarpone and beat it till smooth. In a separate bowl, add the double cream and beat it till soft speaks form.
(2) Slowly, add the whipped cream to the mascarpone. With a spatula, gently fold in both the mixtures. Add the sugar, and mix it in thoroughly. Set aside.
Step2: To Make The Espresso
(3) In a separate bowl, add the coffee powder, and add hot water to it. Stir it till the coffee mixes into the water completely.
Step3: To Assemble The Tiramisu
(4) Take a clean dish. Take one ladyfinger and dip it halfway into the coffee mixture, and put it on one side of the dish. Repeat this process with half of the ladyfingers so that the bottom of the dish is covered completely.
(5) Add half of the mascarpone mixture on top of the ladyfingers. Spread it out evenly so that all of the ladyfingers are covered completely.
(6) Repeat the same process again – Dip the remaining ladyfingers into the coffee mixture and layer them on the cream and mascarpone mixture. Then, add the remaining cream and mascarpone mixture on top.
(7) Refrigerate it overnight. Dust the entire dish with cocoa powder before serving. Server chilled.
