Ingredients

To Make The Tomato Sauce

For The Tomato Sauce can be found on this link

To Cook The Eggplants

  • 2 long eggplants
  • salt, to taste
  • 1 tsp mixed herbs (oregano, basil, rosemary)
  • 2 tbsp olive oil

To Make The Eggplant Parmigiana

  • 1 tbsp olive oil
  • 1 cup parmesan cheese

Method

Step1: To Make The Tomato Sauce

(1) Make the Tomato Sauce according to the instructions in this link.

Step2: To Cook The Eggplants

(2) Chop up the eggplants, and layer the eggplants on a large plate.

(3) Add the 1 tbsp olive oil, salt add mixed herbs. Gently massage on to the eggplants.

(4) On a grill, add 1 tbsp of olive oil. Put the eggplants onto the grill and grill them for a few minutes on each side, making sure to turn them so that they do not burn. Do that for all the eggplants and then leave them on a plate to cool.

Step3: To Make The Eggplant Parmigiana

(5) In a baking tray, brush the olive oil. Add the eggplants on to the tray so that the entire bottom of the dish is covered. Add the tomato sauce and cover the eggplants completely. Sprinkle with cheese on top.

(6) Repeat the eggplant, tomato sauce and cheese layers.

(7) Bake in a pre-heated oven at 180 degrees for 10-12 minutes. Serve hot.
