Quinoa Vegetable Salad

Ingredients (for the salad)

1 cup quinoa

1 cup lettuce, roughly torn

1 medium carrot, chopped julienne

½ cup corn, boiled

1 orange, skin and seeds removed

½ large cucumber, chopped julienne

2 small tomatoes, chopped in cubes

1 medium onion, chopped julienne

½ red bell pepper, chopped julienne

1 apple, skin and seeds removed, chopped small

a handful of coriander, to sprinkle on top

a handful of peanuts, chopped roughly

Ingredients (for the dressing)

3 tbsp tahini (Recipe here: https://old.desidaawat.com/tahini/)

3 tbsp lemon juice

2 tbsp soy sauce

1 tbsp brown sugar

1 tbsp garlic, minced

white pepper to taste

Method

This is a list of ingredients.

Cook the quinoa as per package instructions.

To a bowl, add the tahini.

Next, add the soy sauce.

Then, add the lemon juice.

Add the brown sugar.

Add the garlic.

Finally, add the white pepper.

Mix everything in.

To a separate bowl, add the lettuce.

Then, add the red pepper.

Next, add the cucumber.

Add the oranges.

Add the tomatoes.

Next, add the coriander.

Then, add the onions.

Add the apples

Next, add the carrots.

And then, add the corn.

Finally, add the quinoa.

And give the salad a good mix.

Add the dressing just before eating.

And mix it in.

Sprinkle with chopped peanuts on top.

Serve fresh.

Notes: I haven’t added any salt to my salad since soy sauce is very salty. Taste your salad once you add the dressing, and if you need, add a little salt.
