
Ingredients (for the pastry dough)
100 gms all-purpose flour
a pinch of salt
¼ tsp baking powder
60 gms butter / shortening, chilled and cut into cubes
40 gms sugar
a few drops of vanilla extract.
4-5 tbsp water
Ingredients (for the strawberry filling)
1 cup of cream
2-3 tbsp strawberry jam
2-3 drops of red food colour
½ cup strawberries
a few almonds
Method
This is a list of ingredients for the pastry dough.

To a bowl, add the all purpose flour.

Then, add the salt.

Next, add the baking powder.

Then, add the chilled butter.


With your fingertips, massage the butter into the flour. The mixture should be quite crumbly at this stage.

To that, add the sugar.


Then, add the vanilla extract.

Finally, add the water.

With your hands, mix all the ingredients together and knead it into a dough.

Wrap the dough in cling film.


This needs to be chilled for at least an hour.

After and hour, remove it out of the clingfilm.


Put another clingfilm on top.

With a rolling pin, flatten out the dough.

Make sure that it does not go out of the clingfilm.

With a round cookie cutter, cut out a circle in the dough.


Remove the circle and gently put it into your mould.


With your fingertips, roll the dough out, so that it covers the entire mould.

Do this for the remaining dough. After cutting out the circles, you can roll the dough back again, and refrigerate it and use it later.

With a fork, make marks in the dough.


Bake in a pre heated oven at 180 degrees for 10 – 12 minutes, or till done.

Let them cool down on a wire rack before removing them out from the moulds.

These are the ingredients for the strawberry filling.

To a bowl, add the cream.


Beat it till you get soft peaks.

To that, add the strawberry jam.


Then, add the red food colour.

And mix everything in. Put this into a piping bag.

This is what you need to assemble the strawberry tarts.

Pick one tart and pipe the strawberry filling into it.

Do the same for all the tarts.

Add some chopped strawberries on top.


Then, top it off with chopped almonds.


Chill for 30 minutes before serving.

The strawberry tarts will stay in the refrigerator for up to 2 days.
