Cauliflower cubes flavoured with Tandoori Masala and baked

Tandoori Cauliflower is an easy gluten free appetizer you can make in less than 30 minutes, barring the time it takes to marinate.
Made with a mixture of yogurt, gram flour and a host of spices, this recipe uses very less oil.
A great appetizer for any party!
Ingredients
For the marination
- 4 tbsp oil
- 1 onion, grated
- 1 cup yogurt, thick
- 2 tbsp chickpea flour (besan)
- 3 tsp ginger-garlic paste
- 2 tbsp fenugreek leaves
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/2 tsp garam masala
- 1 tsp dry mango powder
- 1 1/2 tsp salt
- 1 tsp red chili powder
- a pinch of orange food colour (optional)
- 500 gms cauliflower florets, blanched
To Cook The Cauliflower
- 2 tbsp ghee
- butter, to brush
To Garnish
- spring onions, to garnish
Method
Step1: For the marination
(1) To a pan, add the oil, and and heat it.
(2) Add the onions and cook the onions till they turn golden brown. Let the onions cool down.
(3) Once the onions have cooled down, to them add the yogurt, chickpea flour, ginger-garlic paste, fenugreek leaves, cumin powder, coriander powder, garam masala, dry mango powder, salt, red chili powder and orange food colour.
(4) Add the cauliflower pieces to the marinade, and let it marinate for at least a couple of hours.
Step2: To Cook The Cauliflower
(5) After it has marinated, lay the cauliflower pieces on a baking tray, and bake the cauliflower in the oven for 7-8 minutes. After about 4 minutes, baste the cauliflower with ghee.
(6) Take it out of the oven, and brush the butter on top.
Step3: To Garnish
To garnish the cauliflower, sprinkle with chopped spring onions.
