
Ingredients
1 cup white rice
⅓ cup paneer, cubed
1 cup onions, chopped
⅓ cup cauliflower, chopped
1 cup mixed vegetables (carrots, peas and beans), chopped
⅓ cup green bell peppers, chopped
1 tsp ginger, grated
1 tsp garlic grated
salt, to taste
1 tsp red chili powder
1 tsp coriander powder

½ stick cinnamon
2 bay leaves
2 big cardamoms
2 small cardamoms
2 whole red chilies
1 tsp jeera
1 small piece mace
handful of cashews, almonds and raisins
Directions
This is the list of ingredients.

Soak the rice in water and set it aside for an hour.


In a pan or wok, add the oil, then add jeera, cinnamon, bay leaves, cardamoms and whole red chilies.

Then add onions, sauté it for a few minutes, then the ginger and garlic, and sauté for another couple of minutes.

Next, add the potatoes, green bell pepper and cauliflower.

Cook it for about 5 – 10 minutes.

Next, add the mixed vegetables, along with the nuts.

Then, add the salt, red chili powder, garam masala and coriander powder.

Cook for 3-4 minutes. Then add the drained rice.

Cook the rice, along with the vegetables for another 5 minutes, so that the oil and masala coat the rice completely.
Add 2 cups of water and cook on high till the water boils. Then, lower the heat, cover, and let it cook till the water is absorbed by the rice.
Serve hot with raita and pickles.
