Avocado Ice Cream

Similar to the Avocado kulfi recipe, this recipe is a traditional ice cream recipe with avocado making this an ideal dessert for a tropical climate and especially enjoyable during the summer months.

Ingredients

For the Ice Cream Base

  • Full cream milk 500ml
  • Corn flour 18 grams
  • Milk powder 2 tbsp
  • Sugar 8 tbsp
  • Trehalose 25 grams
  • Guar gum or Xantham gum 1/8 tsp

For the Ice Cream

  • 500 ml baseĀ 
  • 200 ml heavy cream (35% fat content)
  • 1 full cup of Avocado pulp

Method

For the Ice Cream base

  • Take the milk in a thick bottom pan and add above ingredients
  • Keep on the gas and stir continuously so that no lumps are formed.
  • Cook till a thick custard is formed .
  • Cool it down and freeze it

For the Ice Cream

  • Whip the cream and base together .
  • Add all the ingredients together and mix nicely and freeze overnight
  • Garnish with Avocado bits and serve
