
Similar to the Avocado kulfi recipe, this recipe is a traditional ice cream recipe with avocado making this an ideal dessert for a tropical climate and especially enjoyable during the summer months.

Ingredients
For the Ice Cream Base
- Full cream milk 500ml
- Corn flour 18 grams
- Milk powder 2 tbsp
- Sugar 8 tbsp
- Trehalose 25 grams
- Guar gum or Xantham gum 1/8 tsp
For the Ice Cream
- 500 ml baseĀ
- 200 ml heavy cream (35% fat content)
- 1 full cup of Avocado pulp
Method
For the Ice Cream base
- Take the milk in a thick bottom pan and add above ingredients
- Keep on the gas and stir continuously so that no lumps are formed.
- Cook till a thick custard is formed .
- Cool it down and freeze it
For the Ice Cream
- Whip the cream and base together .
- Add all the ingredients together and mix nicely and freeze overnight
- Garnish with Avocado bits and serve
