Avocado Kulfi

Combining a traditional Indian dessert like Kulfi (Indian ice-cream) with avocado makes this an ideal dessert for a tropical climate and especially enjoyable during the summer months.

Ingredients

  • 1 can condensed milk
  • 1 can evaporated milk
  • 1 can heavy cream
  • 3 slices of white bread (no sides)
  • 1 can whipping cream
  • 100 gms softened cottage cheese (paneer)
  • Nuts (optional)
  • 5 fully ripe Avocado pulp

Method

  • In a bowl, whip the cream till soft peaks are formed.
  • Add whipped cream, condensed milk, evaporated milk, heavy cream, bread and avocado pulp to the blend and blend a few times.
  • Add the cottage cheese (paneer) and blend a few times.
  • This mixture does not have to be very smooth.
  • Slowly fold in the whipped cream and add the nuts and freeze it for a few hours before serving.
