
Ingredients (for the cake)
4 ripe bananas
3 cups flour
4 eggs
2 tsp baking powder
½ cup hot milk
2 tsp baking soda
2 tsp vanilla extract
250 gms butter (at room temperature)
1½ cups raw sugar (you can also use white sugar)
½ cup raisins
½ cup walnuts (optional)
Ingredients (for the sugar glaze)
½ cup icing sugar
1 tbsp water
Method
This is a list of ingredients for the cake.


Peel and mash the bananas and set aside.

To the all purpose flour, add the baking powder and set aside.

To a bowl, add the sugar.

Then, add the butter.

Beat the butter and sugar, until the mixture is creamy.

Add the eggs one at a time, beating after each addition.

This is how the batter should look like when done.

Next, add the vanilla and beat it for a final time.

Then, add the bananas.

With a spatula, mix them gently into the batter.

To the hot milk, add the baking soda.

Stir it and immediately add it to the batter.

Give it a good mix. The mixture should be quite liquid at this point.

Next, add the flour.

With the spatula, fold it into the batter.

Finally, add the raisins. You can also add the walnuts at this point.

This is how the final batter should look like.

Take a cake tin.

Line it with parchment paper.

Pour the batter in to cover more than half the cake tin.

Bake the cake in a preheated oven for about 40 minutes at 180 degrees celcius, until a skewer inserted into the center comes out clean.

Turn the cakes out and let them cool down completely on a wire rack.

If you do not want to add the sugar glaze, you can cut the cake into pieces at this point and serve.

These are the ingredients for the sugar glaze.

To the icing sugar, add the water.

Mix it in to form a liquid glaze.

Drizzle this glaze on the cakes.

Serve fresh.

The cakes can be stored in an airtight container at room temperature for a few days and for over a week when refrigerated.
