Ingredients

1 cup toor dal

1½ cup mixed vegetables (onions, carrots, aubergine etc)

1 medium tomato, chopped fine

a handful of coriander, to garnish

salt, to taste

1 tsp turmeric

2-3 tbsp oil

1 dry red chili

1 tsp mustard seeds

a handful of curry leaves

¼ tsp fenugreek seeds

1 tsp ginger

1 tsp garlic

a pinch of hing

1½ tsp sambhar masala

½ tsp red chili powder

1 tbsp tamarind paste

water, to wash and cook the dal, as needed

Method

To a cooker, add the sambhar dal. Wash it with water a few times, and then soak in additional water.

To the soaked dal, add salt.

Then, add the turmeric.

Put the lid on and cook the dal till half way done. This should take about 2-3 whistles.

To a pan, add oil.

Then, add the dry red chili.

Next, add the mustard seeds.

Add the curry leaves.

Then, add the fenugreek seeds.

Next, add the garlic.

Saute for a couple of minutes and take it off the heat. Set aside.

Halfway through the sambhar dal has been cooked, add the vegetables.

Add the hing.

Then, add the ginger.

Next, add the tomatoes.

Add the sambhar masala.

Next, add the red chili powder.

Then, add the tamarind paste.

Cook the sambhar dal till done. This should take an additional 2 whistles.

Add the tempering to the sambhar dal.

Sprinkle with chopped coriander on top.
