
Ingredients (for the ice cream base)
500ml full cream milk
2tbsp cornflour
2tbsp milk powder
8tbsp sugar
26 gms trehalose
1/8tsp guar gum/xanthum gum
Ingredients (for the pista flavour)
1cup cream
1tbsp pistachios, roughly chopped
a few drops of green food colour (optional)
a handful of raisins, to sprinkle on top (optional)
Method
This is a list of ingredients for the ice cream base.

To a thick bottom pan, add milk.

Then, add the milk powder.

Next, add the sugar.

Add the cornflour.

Then, add the xanthum gum.

Add the trehalose.

Cook this on a low heat, stirring continuously.

Till it resembles the texture of a custard.

To check whether it done, take a spoon and dip into the liquid.

If it coats the back of the spoon, that means it is time to take it off the heat. Set aside.

This is the list of ingredients for the pista flavour.

To a bowl, add the whipped cream.

Whip it up to stick peaks.


To that, add the pistachios.

Next, add a few drops of the green food colour.

Mix with the ice cream base and let it chill in the fridge.

Scoop out and sprinkle with raisins on top. Serve chilled.
