Cheese Pav

Ingredients

¾ cup milk

1 tbsp sugar

2 tsp yeast

2 cups bread flour/high protein flour

1 tbsp milk powder

2 tbsp butter

¾ tsp salt

oil, to grease the bowl

¼ cup cheddar cheese, grated

1 tbsp milk + 1tsp sugar, to brush the pav

Directions

This is a list of ingredients for the pav.

To the milk, add the sugar.

Then add the yeast.

Give it a stir and let it rest in a warm place for about 10 minutes.

This is how it looks like when it rises.

To a bowl, add the flour.

Then, add the milk powder.

Next, add the yeast.

Give it a good mix. The dough should be quite sticky.

Next, add the butter.

Finally, add the salt.

And knead the dough till it turns soft and pliable.

This is how the dough looks like when done.

Take a clean bowl.

To that, add a little oil and rub it all around the bowl.

Transfer the dough into the bowl.

Rub a little oil on top and let it rest in a warm place for at least an hour.

This is how the dough looks like after it has risen.

The below is what you need to make the cheese pav.

Transfer the dough onto your workplace.

With your fingers, knead the dough a little more.

And form it into a rectangle.

Fold both the edges inside, so that the dough resembles a log.

Cut the dough into equal portions.

Make balls of the dough and cheese. The dough balls should be about 3 times the size of the cheese balls.

Take an oven safe dish and grease it with a little oil.

Take one dough ball and flatten it out.

With your fingertips, roll it out a little more.

Put a cheese ball in the center.

And gently fold in the cheese ball so that its in the middle of the dough.

Shape the ball into a circle.

And layer it on the baking tray.

Do the same for the remaining dough and let it rise for another hour.

This is how the pav looks like after the second rise.

Prepare a mixture of milk and sugar.

And brush this on the pav.

Bake in a pre heated oven at 180 degrees for 20 minutes or till the pav is done.

Serve fresh.

The pav stays in an air tight container at room temperature for up to 4 days, and for more than a week when refrigerated.
