
Ingredients (for the batter)
1 cup chickpea flour
1½ tbsp semolina
½ tsp lemon juice
salt, to taste
1½ tbsp sugar
a pinch of turmeric
1 cup water
1 tsp ginger paste
1 tsp green chili paste
2 tbsp oil
1½ tsp eno fruit salt
1 cup water
Ingredients (for the tempering)
1 tbsp oil
½ tsp mustard seeds
a pinch of hing
2 medium green chilies, chopped
Ingredients (for the garnish)
1 tsp fresh coconut, grated
½ tsp sesame seeds
Method
This is a list of ingredients.


Sieve the chickpea flour into a bowl.


To that, add the semolina.

Then, add the sugar.

Next, add the salt.

Add the yellow chili powder.

Next, add the water.

And mix it in making sure that there aren’t any lumps.


Add the ginger and garlic paste.

Then, add the green chili paste.

Next, add the oil.

Next, add the lemon juice.

And mix it in.

Get the steamer ready.

Take a baking pan.

Grease it with oil.


Just before adding the batter into the pan, add the eno fruit salt.


Mix it in quickly.

And immediately add it to the greased pan.

Steam in the steamer for 15-20 minutes, or till cooked through completely.

Once the dhokla is cooked, take it out onto a wire rack and let it cool down completely. It will start leaving the sides of the pan.

Run a serrated knife on the outside to loosen it completely.

And invert it onto a plate.


Cut it into squares. I made a second batch and cut it into rounds with a cookie cutter.

Layer the dhokla onto a plate.

These are the ingredients for the tempering and topping.


To a non stick pan, add the oil.

Then, add the mustard seeds.

Saute till the seeds start to pop.

Next, add the curry leaves.

Finally, add the red chili.


Saute for a minute and take it off the heat.

Put the tempering onto the dhokla.


Top it off with sesame seeds.


Then, add the grated coconut.


Finally, add red chilies on top.

Serve fresh.

Hi Divya I tried your dhokla today for my friends it came out very good but I made it in the idli maker also added some crushed peanuts in the tarka.
