Kadhai Vegetables

Ingredients (for the onion and tomato paste)

3 tbsp oil/ghee

4 tbsp ginger and garlic paste

3 big onions, chopped fine

2 big tomato, chopped fine

½ cup tomato puree

Ingredients (for the kadhai paneer)

6 tbsp oil/ghee

1 tsp kadhai masala (Recipe: https://old.desidaawat.com/kadhai-masala/)

1 inch piece of ginger, cut julienne

1 tsp red chili powder

1 tsp coriander powder

½ tsp dry mango powder

salt, to taste

1 tsp chaat masala

1 tsp garam masala (Recipe: https://old.desidaawat.com/garam-masala/)

½ yellow pepper, diced into cubes

½ red pepper, diced into cubes

½ green pepper, diced into cubes

250 gms, paneer, cut into cubes

½ cup peas

2 medium potatoes, cut into big cubes

a handful of beans, julienne

1 tsp cumin seeds

1 tbsp kasoori methi

a handful of cashew nuts

Method

This is a list of ingredients.

To a pan, add the oil.

Heat the oil and add the onions.

Saute the onions till they turn golden brown.

Next, add the ginger,

Then, add the garlic.

Add the tomatoes and cook on a medium flame till the water evaporates from the tomatoes.

This is how it should look like when done.

Finally, add the tomato puree, cook for a few minutes and take it off the heat. Set aside.

To a separate pan, add the oil.

Add all of the vegetables, except the paneer and peas.

Saute for a few minutes.

To the vegetables, add the salt.

Add the coriander powder.

Then, add the garam masala.

Add the red chili powder.

Then, add the cumin seeds.

Add the dry mango powder.

Next, add the chaat masala.

Add the turmeric powder.

Next, add the ginger.

Finally, add the kadhai masala.

Mix the masalas in with the vegetables.

Add the peas.

Then, add the paneer.

Finally, add the tomato and onion paste.

Mix everything in and cook for a couple of minutes.

Add the kasoori methi.

Then, add the cashew nuts.

Mix it in and take it off the heat.

Serve hot.
