Paneer Makhani (Navratri)

Ingredients

2 cups paneer, cubed

4 tomatoes, pureed

1tbsp cumin seeds

1tbsp ginger

1tbsp coriander powder

1tbsp cumin powder

½cup cashew nuts

3tbsp unsalted butter

1 green chili, deseeded and chopped fine

pink salt, to taste

2tbsp sugar, optional

water, as needed

Method

Chop the tomatoes and add them to a blender. Blend till you get a smooth puree.

To a pan, add the oil.

Then, add the ginger.

Next, add the cumin seeds.

Add the green chilies.

Then, add the tomato puree.

Next, add the cashew nuts.

Cook till the water has almost evaporated from the pan.

Let the mixture cool down completely and transfer it to a blender.

Add a little water to the blender.

Blend till you get a smooth paste.

Add this mixture back to the pan.

Add a little water, and cook on a medium flame for about 8-10 mins, stirring occasionally.

Then, add the cumin powder.

Next, add the coriander powder.

Add the pink salt.

Then, add the green chilies and give it a good stir.

Add the butter and let it melt in completely.

And finally, add the paneer.

Cook on a medium flame for another 5 minutes and then take it off the heat.

Sprinkle with chopped coriander on top.

Serve hot.
