
Ingredients
2 packets firm tofu
1tbsp corn flour
1tbsp rice flour
4tbsp red curry paste (Recipe: https://old.desidaawat.com/red-curry-paste/ )
1tsp red chili powder
a handful of basil leaves
salt, to taste
pepper, to taste
1tbsp ginger, chopped fine
1tbsp garlic, chopped fine
2cups mixed vegetables (baby corn, carrots, beans, mushrooms, corn)
2tbsp soy sauce
1tbsp oyster sauce
1tbsp vinegar
2tbsp palm sugar (you can also use white sugar)
1tbsp red chili flakes
2tbsp lemon juice
2tbsp oil
2 medium onions, cut julienne
¼cup cashew nuts
1 red chili, chopped, to decorate
a handful of spring onions, chopped, to sprinkle on top
Method
This is a list of ingredients.




Take a clean bowl.

To that, add the tofu.

Then, add the red curry paste.

Next, add the soy sauce.

Then, add the pepper.

Add the salt.

Then, add the sugar.

Add the cornflour.

Then, add the all purpose flour.

Give it a good mix so that the spices and flours coat the tofu completely.

To a pan, add oil.

Next, add the onions.

Saute them for a few minutes, and then add the ginger.

Next, add the garlic.

Then, add the tofu.

Cook it on a medium flame for a few minutes.

Add the cashews.

Toast the cashews for a couple of minutes.

Next, add the vegetables.


Stir and cook for a few minutes.

Add the oyster sauce.

Then, add the chili flakes.

Add the salt.

Next, add the basil.


Then, add the sugar.

Finally, add the lemon juice.

Sprinkle with chopped spring onions on top. Serve hot.
