15 dry red chilies
2-3 fresh red chilies
3 tbsp chopped shallots/onions
1 tbsp chopped galangal/ginger
¼ tsp lime rind
1 tbsp chopped coriander root
1-2 tsp roasted white/black peppercons
½ tsp salt
Directions
This is a list of ingredients.

In a blender, add the red chilies.

Next, add the onions.

Then, add the garlic.

Next, add the ginger/galangal.

Add the coriander roots.

Then, add the lime rind.

Finally, add the black/white peppercorns.

Grind this into a smooth paste.

This can be stored in the fridge for at least a couple of weeks. It can also be frozen for up to 3 months.

Can add water while preparing paste?
Hi Akhila, you do not need to dry roast the chilies. Try blending adding 1 tablespoon of water at a time.
